This portobello mushroom, and garlic tomato and basil Casserole is filling, and soooo satisfying. The only thing non-vegan about it was a sprinkle of parmigiano Reggiano cheese on top of it. Put that together with red wine and...oh baby! A complement of Garlic bread with fresh chopped, barely-cooked-under-the broiler-garlic in EVOO. The taste is exquistie and the health factor reminds me of when my gRam rubbed garlic on toast when I was sick to help boost my immUne system. (I'll save Gram's medicinal shot of brandy for another blog!)
